Garden Fresh Salsa


When I graduated from college I started working at a marketing agency in a different city. I didn't know anyone in town so I got a job as a server part time at Chevy's Fresh Mex Restaurant. I had a blast at that place. What could be better than chips and salsa, margaritas, and a tortilla making machine. The salsa they made there was fantastic and I have been looking for that recipe for a while.






Now, I will say that this is not like Chevy's salsa like it claims to be, but it still had great flavor so I thought I would share it. Obviously, I edited it towards our taste, so below are my instructions. If you want to see the original recipe, go to Food.com.

Ingredients:

1 1/2lbs fresh tomatoes
1 small onion, sliced
2 large jalapeno peppers (or 4 small peppers)
1 small green bell pepper (or 1/2 a large pepper)
1 large salsa pepper
1 tbl cilantro
1/2 tablespoon black pepper
1 tsp salt
1 tsp garlic
3 tsp sugar



Directions:

In a food chopper, place tomatoes, onions, jalapenos, bell pepper, salsa pepper. Chop until pieces are to desired consistency. Drain excess liquid and then stir in remaining ingredients. Chill and serve.

This year, our salsa peppers and jalapenos have been incredibly hot, so that is why I added sugar. If your peppers are mild, feel free to omit the sugar. This salsa definitely has a kick!
