Cake Batter Rice Crispy Treats

I am going to start this post with a warning. I have been known to burn rice crispy treats. Yep- I know right, it should be impossible. I am a miracle worker in the kitchen. I have also burnt Chex Mix before. I don't know how I do these things! When I came across this recipe for Cake Batter Rice Crispy Treats I thought- my bad habits have to be behind me right? Well, I followed her instructions from the blog Gimme Some Oven and that's right- I messed them up. There is this one little part in her instructions that says to take the marshmallow/butter mixture off of the stove once they start to melt. I assumed it was because you were putting the cake batter in there. Nope- ignore that! Totally need to start the process off just like you always do, by melting the marshmallows all the way. I made some changes to her instructions, but I kept the recipe almost the same. The second time around they were amazing. I definitely recommend trying them.

Ingredients:
  • 4 Tbsp. butter
  • 1 (10 oz.) bag of mini-marshmallows
  • 1/2 cup yellow cake mix (the dry cake mix, not prepared into a batter!)
  • 5 cups crispy rice cereal
  • Multi-colored sprinkles
Directions:
Put the rice crispies in a large bowl. Add your desired amount of sprinkles (enough to give the rice crispies some color). Set aside. In large saucepan melt butter. Once melted add marshmallows. Stir marshmallows/ butter constantly until marshmallows have completely melted- remove from heat. Stir cake mix into saucepan until blended. Pour mixture into bowl containing rice crispies and sprinkles. Mix until cereal is completely coated. Put the mixture into a cooking sprayed baking dish (whatever size you want). Let stand for roughly 30 minutes until set. Cut, eat and enjoy!
