Buffalo Chicken Grilled Cheese

Does this not sound fantastic! I am a huge wing fan, but I don't like eating chicken off of the bone (I peel it off with my fingers and it gets quite messy). I also like grilled cheese- but it does get kinda boring so I thought this recipe was a perfect way to spice things up- get it "spice". Okay, I'm not that funny.

So, here's the scoop (seriously- nothing? My food jokes need some work). I looked at her recipe on Grilled Cheese Social and she is all about eating organic, which is cool but just not my style. Also, I wasn't a huge fan of all of her ingredients but I remembered making a buff chix hot wing dip from Hungry Girl that was awesome. If you have never visited hungry girl- please do. She is the greatest thing since sliced bread! She's all about cooking healthy, and always has fantastic recipes. I have like 5 of her cook books and I use them all of the time. Love her! Okay, enough of my ranting. The moral of the story is, I took the best of both recipes, blended them up, and made my own Buffalo Chicken Grilled Cheese!


Ingredients
1- 10oz can of 98% fat-free chunk chicken in water, drained

8oz of 1/3 less fat or fat free cream cheese

2tbl of Sriracha sauce (or you can use 3tbl of frank's red hot sauce-up to you)

1/4 cup shredded mozzarella cheese

3 tbl Blue Cheese dressing

3 tbl light sour cream

10 slices Sara Lee Fit and Delicious Bread

Butter

Instructions:
Take all ingredients (except bread and butter) and mix in large microwavable bowl. Once mixed, place in microwave and heat for 2 minutes. Remove from microwave and stir once again. Butter one side of five pieces of bread and put aside. On the five unbuttered pieces of bread, scoop the buffalo chicken mixture on and spread to create a layer on bread. Place a piece of buttered bread (butter side up) on top of each bread/chicken slice. Heat griddle or pan over med-high heat. Place buttered side of sandwich down on pan and cook until golden brown. Flip sandwich over and heat other side until golden brown.

Eat and enjoy- makes 5 servings. I served it with Shore Lunch's Tortilla Soup Mix which is fantastic and super easy to make!

*You can butter both sides of bread if you want, but I figure its just a waste of extra calories so why bother (my husband never even noticed that the one side was not buttered).
