Fresh and Light Cucumber Salad

I love cucumbers! They are one of my favorite veggies- especially during the summer. My mom made this awesome cucumber salad with sour cream, vinegar, onions, and dill. Still one of my favorite salads, but I found this one on pinterest and had to try it.

If you are looking for a vinegar based salad that is refreshing during the summer heat, you will surely love this! It's also super simple to make, and most of the ingredients are probably already in your pantry.



The original pin comes from Kelsie's Kitchen- I changed a few items but it's so close to the same, I don't think it makes a difference. You should try it today!!

Ingredients

6 large cucumbers, skin removed and sliced thin
1 medium tomato diced
1/2 medium onion diced
1 Tbsp salt

Dressing:
1/2 cup cider vinegar
4 Tbsp sunflower oil or canola oil
2 Tbsp honey
1 tsp celery seed
1 tsp dried basil
1 tsp ground mustard
1 tsp garlic powder
1/2-1 tsp salt (to taste)
1/2 tsp dried oregano

Directions:

Put sliced cucumbers in a strainer and toss with 1 Tbsp salt. Let stand for 30+ minutes. This draws all the water out of the cucumbers, so put it on a plate and store in the fridge so the cucumbers stay cold.

 In a large bowl, combine diced tomatoes and onions.

In a small bowl whisk together all the dressing ingredients. When you are ready to serve and the cucumbers to the tomatoes and onions and toss with dressing.
